Healthy Coleslaw any ideas please.

Hi
New to MFP. I love coleslaw the plain sort with perhaps a bit of fruit added. All the bought stuff is high in calories and I thought about making my own but really unsure about the dressing. I'm guessing I could use yoghurt or low cal Mayo but no idea of mix or other ideas.
I would appreciate any suggestions thanks.

    I use the prepared "lite" dressings, but I use half the amount for all the shredded veggies (or double the veggies). It looks dry at first, but the veggies lose moisture as they sit so it's plenry after chilling out for a few hours.

    I am also a coleslaw fan. :)

    It might be worth using fat free yoghurt instead of mayonnaise as I reckon that's where most of the calories come from. Either that or pre-plan your meals so you can fit a portion or two of shop bought coleslaw in your meals.

    I've made coleslaw dressing with light mayo, rice wine vinegar and sugar or splenda to taste...funjen is right though, make it dry and let it sit as the veggies add moisture to it.

    That's a very good point about not getting too much moisture as I particularly don't like the over soggy coleslaws.

    I have a recipe that calls for a cup of mayo. I sub 3/4 cup plain fat-free yogurt and 1/4 cup light mayo. Don't forget the celery seeds!

    In your context of healthy that would be with no dressing, because calories are unhealthy.

    I've stopped eating creamy coleslaws alltogether. There is a whole world of delicious coleslaws that don't use mayonnaise or a need for a creamy alternative.

    I LOVE this recipe from Jamie Oliver's 30 minute meals: http://www.jamieoliver.com/recipes/chicken-recipes/green-curry-crispy-chicken-kimchee-slaw-rice-noodles/#bKGfPyXCwMgtCdiI.97 He uses "chinese cabbage", which is napa cabbage in the states. You can customize it a lot. It uses lime juice, sesame oil and chillies. It's really full of flavour, but can be changed of course.

    I also make a slaw with some red and green cabbage, carrot, vinegar, lemon juice and maple syrup.

    I got this lovely and simple recipe from Franus Fitness and Nutrition:

    In your bullet or blender mix:

    1/2 cup freshly squeezed OJ
    
1/4 cup freshly squeezed lime juice

    1/2 small red onion
    chopped
 2 cloves garlic
    chopped
 1/4 cup fresh basil
    
2 tbsp fresh cilantro

    
1/2 cup evoo

    Salt/pepper to taste

    1 tbsp honey (OPTIONAL..I don't use it..too high in calories..and too sweet for me)

    Pour lightly over a large container of finely chopped red cabbage and kale and let it sit for a bit. Reserve the rest of the 'sauce' for those that prefer more or for another time!! So good
    and it looks pretty on the plate too!

    Big coleslaw eater; I think I enjoy it most for the crunchiness of the cabbage & shredded carrots. I don't follow any particular recipe so I start with one of the pre-shredded bags of coleslaw and I'll add in some sunflower seeds or pepitas and cranberries (or any dried fruit) sprinkle salt & pepper to taste and a quick drizzle of grapeseed oil. OK, that may not technically be "coleslaw" in the traditional sense, but I certainly enjoy it often and it's somewhat healthy.

    I like using the Bolthouse Farms blue cheese yogurt dressing (it's in the produce refrigerated section of the grocery). It only has 35 calories for 2 tablespoons and tastes so good that even my "diet food" adverse husband loves it.
