Been a busy day at work today... but I'm finally home.. after workout thinking about making dinner.. what do you guys recommend? Something easy preferably

    Anniversary Chicken is easy and takes maybe 30 mins. Cubed steaks are good and fast to make and countless ways to make them.

    This ^^ It's hard to make suggestions without knowing what ingredients you have on hand, or what type of foods you like.

    We are having grilled trout, collard greens sauteed in olive oil and garlic, and marinated mushrooms.

    My go-tos are omelet, stir-fry (good for whatever you have on hand), lettuce wraps, or a big ole' "throw everything you have on site in" salad.

    You could make a fritatta which is yum! Or you could pan sear your fish and put it over a nice salad (that's what I'm having for dinner!)

    I am overcoming a lifetime aversion to mushrooms, having just discovered shitaake dehydrated. How do you marinate mushrooms?

    Stir fries are great. Boil water for rice. Start rice. Cube up chicken, saute it in a bit of oil. Add some minced garlic, and grated ginger, if you just have dry spices from your cupboard, add those ingredients to your sauce. Then start adding cut veggies to the chicken.

    Sauce: mix together 1 cup broth (bouillon & water), 2 teaspoons soy sauce, 4 teaspoons cornstarch. You can add a tablespoon or so of hoisin sauce, or rice wine vinegar, or cooking sherry for a different flavor profile. Different oils can change the flavor too. A little sesame oil is a great add in.

    Add sauce mix to your cooked veggies & stir until sauce thickens. Serve over rice.

    For me personally, I would spray a skillet with nonstick spray. Season the fish with whatever you like. I like old bay, Mrs. Dash or cajun seasoning. When fish is done, squeeze lemon juice over it.

    This is great as a main dish, in fish tacos or for a sandwich.

    Everyone had great ideas.

    This recipe is very similar to what I do. I usually add a bit of finely chopped onion and red pepper to mine. And sometimes I use vinegar (either red wine or apple cider) instead of lemon juice, depending on how bold a flavor I want. I like them cold as a snack so I make a big batch and store some for later. Since we're having fish tonight, I'm using lemon.

    Toss the veggies and fish in a baking dish with a little water and whatever spices you want and bake it for like 20 min at 450. That's what I had last night and it was really good! Even my 19 mo/old boys loved it. Oh, haha, I just noticed someone else made the same suggestion.

    Bookmarked the mushroom recipe for later. I'm banking we can eat those darned things even when we recognize them. So far I've hidden them in sauces.

    Scrambled eggs are my go to "I can't deal with cooking, but we have to eat" meal. Chop and sauté the veggies then scramble the eggs with them. Add cheese if you have and like it. Maybe add some toast. Or serve the eggs in a tortilla with some salsa.
