Looking for Quinoa recipes Please.

It was suggested to start using Quinoa as a way to help increase fiber, but I have never cooked with it before.

Looking for some easy recipes that hopefully my picker hubby and son will like.

    As a start, you can use it to replace rice. It works well for stuffing peppers or squash, and I love it in egg muffins for breakfast. What sort of meals are you looking for?

    An easy and tasty use is quinoa "risotto". Before cooking quinoa make sure to wash throughly, as it will have a bitter taste otherwise. Cook like rice, then add in your favorite tomato sauce and parm. cheese. Really easy and delicious.

    I adjusted it a bit: less butter, cooking spray instead of coconut oil, unsweetened almond milk instead of regular. You could probably use lower fat cheese too.

    I just finished a batch of this. It is really good, even my 94 year old mother who never had quinoa loved it.

    Quinoa Chicken Chili (makes 8 servings)

    1.00 cup(s), Quinoa (rinsed)
    2.00 container (1 4/5 cups ea.), Diced Tomatoes (with liquid)
    1.00 container (8 tbsp ea.), Diced Green Chilis (drained)
    3.00 cup(s), Reduced Sodium Chicken Broth
    1-1/2 lb. Boneless Skinless Chicken Breast
    1.00 tsp(s), Spices - Garlic powder (or 3 cloves garlic)
    2.00 tsp(s), Ground Cumin
    2.00 tsp(s), Spices - Chili powder
    4.00 cup, Beans - Black, cooked, boiled, without salt (or 2 cans black beans, rinsed)
    1.67 cup, Frozen Whole Kernel Corn (or one can whole kernel corn, drained)

    Cut up chicken into bite size pieces (or put in whole and shred later after it cooks) and place in slow cooker. Add remaining ingredients and cook on low for about 8 hours.

    ETA: 10 g fiber per serving between the quinoa and the black beans

    I have been making a quinoa-lentil broth bowl, similar to the one offered at Panera Bread.

    Quinoa Lentil Broth Bowl

    1 Tbs. olive oil
    6 thinly sliced lemon wheels
    1 onion, chopped, 1 cup
    2 cups packed chopped kale leaves, abut 2 ounces
    2 carrots, peeled and chopped, 1 cup
    1 rib celery, chopped, 1/2 cup
    1 envelope Sazan seasoning, Goya or Knorr
    2 Tbs. Goya Sofrito
    3 cans (14.5 ounces each) chicken or vegetable broth, 5 1/4 cups
    1 can (14.5 ounces) diced tomatoes with roasted garlic and onion
    1/3 cup EACH lentils and quinoa OR 2/3 cup Harvest Grains Blend*
    cooked sliced chicken, optional

    1. Heat oil over medium-high heat in saucepot. Cook lemon wheels until golden and caramelized, turning once and reserve.

    2. Cook onion, kale, carrots, celery and Sazan seasoning until vegetables are just tender, 5-7 minutes, stirring occasionally.

    3. Add chicken or vegetable broth, diced tomatoes with their juices and reserved lemon wheels. Bring to a boil. Stir in lentils and quinoa, Reduce heat and simmer, covered, until grains are tender, about 10-15 minutes.

    4. Top with sliced cooked chicken, if desired.

    Makes 6 cups.

    You serve this broth bowl topped with grilled chicken, or a hard boiled egg, and it is delicious!

    Quinoa burgers!
    Once cooked mix in an egg and add whatever other additions you like, I use chickpeas and beans mainly, good for protein too!

    If you like Mexican food, you'll love this quinoa enchilada casserole. I make it every week, and my family loves it. I use green enchilada sauce instead of red (personal preference) and leave out the corn. Then I top it with salsa to serve. Delicious and very easy to make. And it freezes well.
