Weekly planning....what is for dinner?

We are going shopping later this afternoon and I am trying to work at planning out the week of dinners plus some healthy snack options. This seems to be my struggle point this past week. We are busy Wed - Fri so my cooking is limited!
I thought this could be a nice place to share with others healthy dinner options.
What is a favorite dinner at your house?
----Tacos or burritos are the top of the list. This week I plan to use a pork roast instead of ground beef.

I'm looking for healthy meal ideas too...I need some new ones.
My go to one is grilled fish or shrimp with roasted veggies. Tilapia is super quick. I usually make a homemade salsa and top the tilapia with that and then make a quick side of polenta or steamed/roasted veggies.0 -
i like to do a stirfry (redmeat) with heaps of vegies carrot, onio, capsicum, mushroom, zucchini, cauli, brocolli and anything else i can find with 1/2 to 1 cup of rice. add some honey and a bit of soy cooking0

Grilled bunch of (six skinless boneless) chicken breasts yesterday moring. Looking to make a crock pot full of:
Chicken Fiesta soup (like tortilla soup with out the tortillas )
4 chicken breasts (cooked, shredded)
1 can (14 1/2 oz) stewed tomatoes drained
2 cans (4 oz each) chopped green chilies
1 can (28 oz) enchilada sauce
1 can/box (14 /12oz) low sodium chicken broth
1 (15 oz) can of black beans drained
1/2 cup ketchup
1 TBS sugar
1 tsp Cayenne pepper (too taste (hot))
1/2 tsp red pepper flakes (too taste (hot))
1/2 cup clean water
1 cup finely chopped onions
2 cloves minced garlic
1 tsp cumin
1 tsp chili powder
3/4 tsp pepper
1 tsp salt
1/4 cup fresh chopped cilantro
1 cup frozen corn
1 medium yellow squash diced
1 medium zucchini diced
Combine all in crock pot. Cover cook on LOW ~6 hours.
My toppings of choice:
2% Kraft mexican shredded cheese
low fat sour cream
The other two chicken breasts will be cubed and used in a couple of grilled chicken salads this week.
Other meal plans this week:
Lean Beef Rib eyes grilled, with grilled veggies and some type of bean (Black eyed peas)
Lean Hamsteak pan fried, steamed veggies, and Navy beans
Pan seared Talapia, grilled asparagus, and black beans

I don't know what I am going to have for my lunch TODAY, let alone plan for a week. I am terrible at that, I keep saying I am going to do it to save money but then don't. :ohwell:0

I am a working single mom who is losing her love of cooking. It helps me to do some big cooking on the weekend, so that I have lots of go to left overs for the busy work week. The crock pot is also my best friend, coming home to a cooked dinner is the best. Weight watchers has some good recipe ideas for the crock pot, I highly recommend them.0

Well heres my plan for the week - Im only stating the evening meal as the breakfast and lunch are the same on a daily basis.
This week I will be having:
Monday - Teriyaki chicken, with broccoli, carrots, trim beans & brown rice.
Tuesday - King Prawn & Black Bean stir fry with red & green peppers, broccoli, mushrooms & onions with brown rice
Wednesday - Piece of cod fillet with salad & a petit pain roll
Thursday - Home made chilli with extra lean mince, served with brown rice
Friday - BBQ chick (hopefully on the BBQ otherwise in the oven) with salad and brown roll.
Saturday - Gammon, with Sweet jacket potato & Salad
Sunday - Chicken Stir Fry (spicy Tomato)

* Uncured ham and red skin potatos with onion, garlic and paprika. Steamed broccoli on side.
* Lean steak on grill, sauteed mushrooms, from-scratch ceasar salad, baby red potatoes with sea salt and cracked black pepper. Birthday cake (son's birthday).
* Shrimp scampi, roasted brussel sprouts, tomato and feta salad.
* Lemon chicken, grilled portabella mushroom, seasoned green beans, side salad
* Chicken sausage, snow peas, bok choy and onion stir fry with cajun rice
* Amy's organic pizza with garlic butter dipping sauce (Sat night special!)0
