1 pound imitation lobster or you can use shrimp
Half a red onion diced
Half a bunch cilantro chopped
Half a red bell pepper diced
1 Green onion chopped
Half a jalapeño diced. Or more if you like it spicy
Lime juice
Salt and pepper

Combine all your diced and chopped ingredients together in a bowl mix with lime salt and pepper and place into the refrigerator for about an hour before serving. You can make any changes you like and serve anyway you prefer.

i tried cheviche for the first time the other day and loved it! I didn't know what it was, and I'm glad I didn't because I would have hesitated. Nom.

Shrimp cook very quickly - you can steam them for a quick meal. Once they turn pink they are cooked. If you overcook them they turn very rubbery, so keep an eye on them as they cook!

OP, thanks for the recipe. I love ceviche!
