Skillet Frittata
2 eggs
Diced bell pepper and onion
Crumbled turkey sausage
Diced tomatoes
You can use any toppings you like.

In a non-stick small skillet, sauté sausage, bell peppers and onion, Pour eggs overtop of meat and veggie mixture. Sprinkle tomatoes and Italian seasoning on top, cook until firm on med low heat.

    It's amazing how far two eggs can go when you do this. A few times a week, I make this with leftover steamed asparagus, green onions, bell peppers, tomatoes and a sprinkling of 2% cheddar. It's the most filling breakfast I've found and it is a LOT of food if you add enough vegetables. For me, the eggs are basically there to bind the veggies together.

    Yes!! It definitely keeps me full until lunch, I've never used asparagus in it. I love that! I'm going to add it next time.
