I'm just commenting so I can follow this thread. We eat mostly vegetarian with only occasional meat meals and I'm always on the look out for new Veg recipes.

Vegetarian here, for 32 years! I was apparently a very determined 5 year old when I stopped eating meat.

Been vegetarian for about 16 years and eat somewhat low carb these days. So I don't tend to eat lots of pasta and rice dishes like many other veggies do. I keep an open diary as well.
