Coconut flour tamale quickie

2 tbsp. coconut flour
1 tbsp. flax meal (optional)
pinch of salt
water
1 oz cheddar cheese

I <3 tamales. My tummy can't deal with corn. Coconut flour is reasonably close! Throw some hot sauce on it, and I'm totally set. Not as good as if you tried to steam the thing... but hey, it's a quickie.

Mix flax meal and coconut flour in bowl. Add a pinch of salt. Add water a few tablespoons at a time, wisking with a fork, until you get a soft mush like consistency. Press flat with fork. Microwave for 60 seconds. Add cheese and microwave for 60 more seconds. Throw on some hot sauce or salsa. Would also be good with some shredded meat or beans.
