What are your favorite lunches?

I've been having a really hard time coming up with good, healthy ideas for lunch. I was making either tuna sandwiches or grilled chicken salads for a while, but I'm pretty tired of them. I need some inspiration!!

quesedillas, cold plates (cheese, hard boiled egg or olives, veggies, dip), canned soup with a sandwich, baked potato, boca burger on a bun, fruit salad with greek yogurt or cottage cheese0

I love to dump a small can of chick peas in a bowl with a diced jalepeno, a little diced onion, a tablespoon of sour cream and some cilantro, cumin, salt and pepper. Definitely my favorite lunch: delicious and hits all my nutrient goals.0

Organic chicken sausages, quinoa and either leftover roasted veggies or microwave veggies. Sometimes with a spoonful of hoisin sauce on the rice if I'm feeling wild, lol.0

My favorite last minute lunch is tossing together an avocado, a Roma tomato, 1/3 pound of cooked shrimp, with some salt and pepper, and a healthy squeeze of lime juice.0

I am a sucker for salads. Chicken or prawn salads are my favourite with cottage cheese, lettuce and corn (surprisingly great combination and super low calories).0

I make Rajma Chawal or some type of curry like Anchari Murg pretty much every week. High in protein, high in super beneficial herbs and spices and you can cut the oil and salt of the recipe down and still have a TON of flavor. I can get a full cup to a cup or more and a cup of brown rice for about 4-500 calories. Its rich and full so I don't feel like I'm eating to try and lose weight. This type of food is my favorite.

I like tuna salad, or tuna with crackers, or cottage cheese with ham, cucumber and tomato. Sometimes I just have a banana with natural yogurt and peanut butter.0

I buy low sodium black bean soup (Dr.McDougall's) and make a batch of quinoa at the beginning of the week. I make a cup of soup and throw a 1/4 or 1/2 cup of quinoa into the soup and heat it up. I usually eat that with cut up celery/peppers/tomatoes and a hummus cup. Filling and delicious.0

My go-to is a can/cup of soup + a side. Today's soup is vegan split pea and the side is a steamer bag of edamame. Other sides I've done: carrots and various dips, popcorn, veggie chips, granola bars, pouches of goldfish crackers, etc. If I'm under 500 calories with my soup + side, I add a piece fruit or chocolate.0

Typically leftovers from the night before. As you mentioned something like tuna or chicken salad in a pinch.0

I make a batch of roasted tomato soup and eat about a cup of that with some veggies (snap peas, carrots, peppers) dipped in guacamole or hummus. Add either some cheddar cheese and a few crackers or a small baked potato with a bit of ranch. Depending on amounts of everything, it's usually between 400-600 calories.0

I usually just have whatever protein (usually meat of some sort) was leftover from the previous night's dinner and a salad. I'll sometimes add a side of yogurt or fruit or both lol.0

A fast and easy lunch is also canned tuna/ chicken with a pre made salad, microwavable rice or grain wafers.0

Greek yogurt with flax and chia seeds mixed in, along with a banana. I have it every day and never get tired having them.0

I sometimes microwave (oven takes too long) a potato, then add lots of cottage cheese. Serve with some veggies and I'm good to go!0

I work from home, so I don't have to worry about packing something to take to work. I usually have frozen veggies stir fried with shrimp, chicken or fish, with some kind of sauce or marinade. Sometimes I add half a serving of tortellini, since I can just chuck the frozen ones in with the veggies and not need to boil water in another pan. Or if I'm having some kind of Asian flavor, I'll add crispy chow mein noodles on top. Takes about the same amount of time as it would to cook a frozen dinner in the microwave.0

Hummus with cut-up vegetables. Frittata with sautéed vegetables and a bit of cheese. Dinner leftovers. Frozen pizza. Tofu scramble. Fried rice if you have leftover rice.0

I love make-aheads that I can freeze and grab at will. My fave is curry bean burgers (check out the recipe from "Isa Does It" for Island Burgers + nectarine salsa) and Persian turkey burgers from "Skinny Taste Cookbook". I pair them with a big mixed green veggie salad and a cut up fruit. Very satisfying.0
