What should I do with 7 cooked pork chops?

I just roasted 8 pork chops that were going to expire tomorrow. What can I do with them now? (there are 7 left after me eating one)
Should I freeze them whole and take them out as needed for a side of protein? Or, will I be able to eat them up 2 per day throughout the week? IF so, what can I make with them? Stir Fry? What else??

dice one up and put it in your salad. Yum!
Put some meat into the food processer to shred, add BBQ sauce, throw on a whole wheat sandwich thin......0 -
I've never had diced pork on a salad??!! What other veggies compliment this well in a salad? I like the BBQ idea!0

I would make a salad with lettuce, cucumbers, tomatoes, croutons (because it wouldn't be a salad without croutons), dried cranberries, diced pork, and home made buttermilk ranch dressing (keeps the sodium down)
Pork is just like chicken, the same foods tend to compliment it.0 -
Huh - I'll be darned. I've never seen diced pork on a salad - even in a restaurant - but this is cool new information! The cranberries sound great with it...0

Shred and use on a whole wheat tortilla with cheese, peppers, tomatoes, etc for a quesadilla.
But I do love the juggling suggestion, as well.0 -
Salads get boring when you make them exactly the same every day. I started to experiment. Now, I can't have a salad without cranberries.0

Dice them up, add some taco seasoning and make tacos!
Slice thin and add to a broth based soup with Chinese vegetables.
Make some mashed potatoes, some veggies and reheat.0 -
Throw them in the crock pot with some barbecue sauce.0

I was going to recommend the same thing! I had this just last night. My salad had lettuce, tomato, feta cheese, and onion with olive and balsamic vinegar.
In this respect pork really IS the other white meat...consider using it the same way you would use chicken breast.0 -
Cut them up in chunks and freeze. You can take them aout and use as you need them.0

You could use some in soup. I thought that was crazy until I had some ... and hey, not bad!0
