Slow cooker on the road

I'm a long haul truck driver so eating properly is a daily challenge but I'm trying with my slow cooker so if anyone can help me that would be great ...

    Just had an excellent chicken and chili pepper stew last night in the slow cooker. Very easy, and you can make a ton for a solid week if you need it! I would utilize the hell out of the slow cooker if I didn't have time to make meals at home. Spend a couple hours when you have the time, look up recipes, get the ingredients and get to slow cooking!     I love chicken pot pie made in slow cooker. I use frozen chicken breasts or thighs, chopped fresh or frozen veggies and either dry chicken gravy or a can of cream of chicken/mushroom/celery soup. Doesn't require much water be added and you can get really creative and toss in a little plain greek yogurt, it'll create a thicker sauce and add a bit more protein.

    You can also bake potatoes in the slow cooker, just wrap them in aluminum foil, I do this with carrots too, make foil pouches and put right on top of the meat.

    I haven't tried it yet but I understand you can use the slow cooker to make meatloaf, whip up your meat mixture and press into the bottom of the slow cooker.

    I do this when on trips. I use a small slow-cooker and my G. Foreman mini grill. My fave for the slow cooker is chicken chunks (made w/the grill), low-sodium chicken broth, minced onion, then I vary my spices. Toss it all in and cook overnight (or whenever you get 4-6 hrs). I did this on my last cross-country trip and though it took some planning, I've done it often enough now that it's no issue (plus, saves from eating junk food/drive-thru food).

    You'll get lots of great recipe replies but also if you've got a bit of time in between hauls or wait time....do a search on Crockpot meals here and you'll find loads of great choices! :)

    I love making chili and vegetable soups in mine. You can fudge those recipes a lot and still have them come out great. Plus, I bet it will be nice to wake up to a glorious aroma!

    pot roast is soooo gooood in the crock pot. any chunk of beef stock onion carrot celery potatoes yum.

    LOL - yeah! Sometimes it can be difficult to wake up at 4 a.m. to the great smell of roasting soups...! Be careful not to use spices you don't like the smell of - that could ruin a good sleep too!
