hii I recently decided to try out a vegetarian diet, but i am clueless when it comes to cooking without meat. Any recipe suggestions? :)

    You're welcome to peek at my diary, I'm trying to track more actively. I eat a plant-strong diet, lots of roasted veggies (tossed in basalmic and olive oil) and beans. I find TONS of ideas on Pinterest!!

    I'm not vegetarian but I did try a vegetarian lifestyle one time. I didn't eat eggs but I did eat milk products.

    Some ideas:

    Stuffed bell peppers - stuff with brown rice, tomatoes, veggies

    Eggplant parm: baked lightly salted sliced eggplant until tender, top with marinara and cheese. Salad on side.

    Zucchini boat pizzas: scoop out zucchini, fill with marinara, chopped veggies & cheese

    Pasta loaded with roasted veggies. I didn't like the whole wheat but did like the dream fields lower carb.

    Morning star makes a great chicken patty.

    Black bean burgers: recipes are online. I basically used canned black beans (1/2 whole; 1/2 mashed), minced onion, minced peppers, bread crumbs, cumin, oatmeal, ketchup. An egg will help it bind. If you're not eating eggs, a great alternative is chia seeds soaked in water. They become a jelly like consistency.

    Flat bread pizzas.

    Zucchini noodles with marinara

    Vegetable lasagna. Something I found that I like was using sliced eggplant or zucchini plus wonton or egg roll wrappers as noodles.

    Wonton cups: put wonton wrapper in muffin tin, fill with veggies and cheese. The one I liked had corn, black beans, salsa, peppers, onions.

    Vegetarian chili is always great. Or a tomato basil soup with a garlic toast.

    Vegetarian fajitas or tacos. I sauteed peppers, onions, tomatoes; added fajita seasoning. Serve with warm tortillas. For tacos, you can use beans or chickpeas.

    Portabella burgers. For this, I really like using the 100 calorie whole wheat sandwich rounds since I'm able to taste the mushroom better and it just fits great together.

    A recent discovery I had was butter bean hummus. Puree drained canned large butter beans in mixer with garlic, small amount of olive oil, sesame oil, fresh lemon juice, cumin, cayenne. It's awesome in a wrap with sliced veggies. You can also add roasted red peppers to kick it up some.
