Quinoa

Hi everybody,

I bought of bag of quinoa at Costco thinking that I had a recipe for a quinoa salad, but I can't for the life of me find the recipe. Does anyone have any recipes they'd like to share? Thanks!

    I made quinoa for dinner last night, and it was DELICIOUS!


    1 c. quinoa (dry)
    1 can (14.5 oz) swanson broth (I used vegetable)
    2 TBSP water
    1-2 grilled chicken breasts, cut into pieces
    1 can chickpeas, drained and rinsed
    4 dates, finely chopped
    3 green onions, finely chopped
    1/4 c. sliced almonds

    1/4 c. lemon juice
    1/4 c. olive oil
    1 tsp cumin (I think I used a little more; I love cumin)

    Cook quinoa in the broth and 2 TBS water and put into a bowl and fluff a little. Let cool for a few minutes while you're preparing the other ingredients. Mix lemon juice, olive oil, and cumin with a whisk until creamy looking. Pour over top of the quinoa. Add the remaining ingredients and mix. Serve on a bed of romaine lettuce.

    I also put mung sprouts on top of mine,and served alongside of sliced fresh strawberries. It was really yummy.
