I end up eating the same routine of veggies with my proteins.
- steamed broccoli
- Green beans
- Sautéed zucchini and mushrooms
- Various cauliflower concoctions
- Zucchini spirals
Someone recently told me about roasting radishes so I'll try that.
What other veggies can I pair with my protein? I'm looking for sides of HEARTY portions with 100 calories or less.

Roasted veg is great, I roast broccoli, cauliflower, zucchini, mushrooms and cherry tomatoes with a drizzle of olive oil and balsamic and it's lovely!
I want to try roasting radishes, I have some in the fridge.
Try stuffing big mushroom caps with a medly of chopped vegies, fresh herbs and a bit of feta cheese and baking them too - yum!0 -
Try roasting instead of steaming once in a while. Adds minimal calories and makes for a nice crunchy change of texture.
Bell peppers roasted on the grill are yum.
Salads made from spinach or other dark leafy greens can be great. Toss in some cherry tomatoes, some cucumber, some green pepper, maybe some dried cranberries or some nuts for crunch. A little homemade dressing. Voila.
Asparagus on the grill or roasted goes wonderfully with fish. Drizzle a little balsamic vinegar over it right before it's done cooking and it will caramelize.
If you live in a cold climate like I do and try to eat in-season veggies where possible, go for root vegetables like turnip, radish or carrot.
A trip to your local farmer's market might help; they often have whatever's in season out on display for tasting, and you can chat with the vendors about favourite cooking methods, recipes and serving suggestions.0 -

I made this amazing coleslaw with greek yogurt instead of mayo today:http://www.budgetbytes.com/2015/03/cumin-lime-coleslaw/ which came out to like 55 calories a serving, and that was a big filling serving!
And greens! I am a huge fan of steamed collards/kale/mustard greens, whatever is available, with vinegar. Sautéed with a little flavored olive oil is also great.
Or carrots and parsnips (or only one or the other if you prefer) tossed with a small amount of honey and sesame seed oil, sprinkle a bit of salt and some sesame seeds on top (okay I like a lot of these), and roast in the oven.
Roasted brussel sprouts are also fantastic, just halved with a small amount of olive oil and some balsamic vinaigrette.
Maaaaybe I like vegetables a bit.0 -
i eat most of my veggies raw bc my kid likes them that way and i am also too lazy to cook them. Sugar snap peas are our favorite, along with cucumbers, broccoli, sweet peppers, zucchini. we dip them in ranch sometimes0

You've just opened up a world of lunches... by using eggplant for the "cannelloni" you just gave me way more calories to spend on cheese.... genius!0 -
I'm not usually a spam so sorry if anyones seen this twice, just saw the same question twice so why not answer same - I threw this all together the other day and it made 12 piled ladle portions at 84 calories each, sometimes I'd have 2 ladles instead of something with it...and why not still not even 200 calories!
I didn't use 170something mls of water, just the weighed gravy granules dry all straight into the pot.... the chicken I could have possibly left until last though as it did come to pieces a bit - still yum!

My favorite combo is zucchini, yellow summer squash, red onion, red pepper, crimini mushrooms, and asparagus together. This makes an entire large baking sheet of veggies at around 300 cals. I toss them with 1T olive oil and salt and pepper. Roast in the oven at 425 until done (about 20 min). They are so so good, and easy to portion out to 100 cals while still being a large amount and very filling.0

Go to the frozen section of the grocery store and have a look at what's available.
Go to the fresh veg section of the grocery store and have a look at what's available.
One of the things I've been doing since I started with MFP is to have a good look at the options available in my grocery store, and I have found some interesting ones.
You can do a low cal soup (like what La Zuppa produces) and put green beans, carrots, broccoli and caulifower into it to thicken it up.
You could do a veggie curry.
What about a stir fry?0
