looking for chia and quinoa recipes

I have no imagination when it comes to using these two ingredients. I have used the chia seeds in overnight oatmeal and the quinoa in a salad with black beans, corn and salsa.
How do you like to eat them?

I love chia seed ice tea, although I add the chia seeds to the tea when it's hot so they absorb the liquid better. It's best to let it then sit for a few hours in the fridge0

For Quinoa I do a lot of the same stuff I do with rice - Spanish rice using quinoa is really good.0

I put chia seeds in my yogurt and on my salads. I also add them to soup.

These Quinoa Chipotle Meatballs are really good and filling. I like to make a batch and freeze it into 5 servings for easy grab and go lunches.
This Quinoa Fiesta Enchilada Bake is really easy for a weeknight meal, particularly if you make it the night before and just pop it in to bake the following day. It also freezes well if you pop it in for about 3 hours until semi-solid, cut into squares, and put the squares side by side in a large freezer bag. Individual servings for anytime.0 -
Oh, and for chia seeds, I usually just soak them in almond milk overnight and add them to my daughter's smoothies in the morning, but I also have used them quite successfully to thicken food like gravy.0

I make a Greek quinoa salad. Pepprocini's, black and/or green olives, tomatoes, cucumber, red onion, chickpeas, feta, and a tiiiiiiny bit of low cal Italian dressing. SO GOOD!0

I use quinoa just like I would rice! Garlic mushroom quinoa is a go to for me. Cook it up according to the package. In the meantime I sauté mushrooms and garlic for a few minutes with a small amount of olive oil (I have a misto that I spray the pan with) and then I just mix it all in!

As far as chia seeds, all I done is sprinkle them on my yogurt.

This, plus add a little vanilla for the overnight. When eating, I add a little maple syrup, cinnamon and nutmeg and have delicious pudding (texture kind of like tapioca).0
