It's been a bit chilly where I live the past couple days so today I decided I wanted a hot lunch.

Preheat oven to 375° F. Prepare Lasagna according to recipe (above) and place it in the largest compartments of the baking tins. Slice carrots on an angle and place half of them in each of the smaller compartments of the baking tins. Spray the carrots generously with butter flavored cooking spray. Sprinkle with a pinch of cinnamon and allspice. Salt and pepper if desired. Stir to coat. Core and slice pears. In a small bowl whisk together juice, honey and remaining cinnamon and allspice. Place the pears in the last compartments and pour the juice mixture over them. Cover and bake for 45 minutes. Let cool a little before eating.

My husband actually ate it ALL! He loved the lasagna despite the lack of meat.

And the pears turned out tasting almost like apple pie filling. ^_^
