Grilled ginger spiced chicken with brussel sprout and potato kabobs. We marinate the chicken (usually skin/boneless breasts or thighs) in a mix of olive oil, honey, balsamic vinegar, fresh ginger and garlic, red pepper flakes and quite a bit of soya sauce. We make extra marinade to brush over the sprouts too while grilling, its one of our families favorite meals.0

I grill all kinds of peppers, zucchini, yellow squash, portabello mushrooms, eggplant, onions, etc. I have done new potatoes with onion in a foil packet too.

I love asparagus on the grill, it gets all charred and yummy Also, butternut squash cubes in foil is delicious. And grilled pineapple mmmm0

I left out asparagus! How could I have forgot that? I also forgot corn on the cob, artichokes and believe it or not spaghetti squash. You have to steam the artichokes first, halve them and clean out the choke. The spaghetti squash get a nutty sweet flavor.
Here is the artichoke recipe I use. Try the garlic lemon mayo and peppy basil butter if you can plan for the calories. They are delicous.

Spaghetti Squash
Pre-heat grill to high heat for 10 minutes, and then turn it down to medium heat to cook the squash. While pre-heating the grill, wash the outside shell of the spaghetti squash, cut the squash in half lengthwise and scoop out the seeds.
Rub the cut-side with vegetable oil and sprinkle with your choice of seasoning before placing it on the grill. Place the squash cut-side down directly on the grate. Cook the squash for 20 minutes. Flip squash cut-side up after 20 minutes. Cook another 20 minutes checking for doneness on occasion. Check the squash by touch the inside with a fork to see if the fibers are cooked and ready to pull apart. Remove from grill.
When squash is cool enough to handle, pull the squash into spaghetti like strands.0 -

I also love simple teriyaki or "asian" flavor marinades for chicken and pork chops. same with Mexican/latin flavors.
I also grill all sorts of veg- zucchini, squash, asparagus, green beans, corn, tomato slices, onion wedges. I have a great grill pan, or use a cast iron skilled on the grill. just simple salt, pepper, drizzle oil and maybe minced garlic.
