Healthy appetizers/desserts
I have several holiday parties coming up and usually I will be bringing a dish with me - an appetizer or dessert. I'm not very creative, so the best I've come up with is fruit and veggie trays. While these are great options - I think everyone in my circle of family and friends is tired of this being my "dish"! And I'd like to "make" something.

I was just making sugar free jello and a wonderful thought (atleast I think so) make the diet soda cake using diet 7 up or anyother light soda, white cake and make a jello cake..for those who do not know how after cake is done use a wooden spoon and poke holes down in the cake, then pour jello in holes and put in refrig..to set up...then you could put fat free cool whip on top...0

This made me remember my mom making a jello cake at Christmas. She'd bake a white layer cake and do the jello poke thing with one layer green and the other red. The frosting was white. She didn't do it light, but you certainly could. Very 60s retro.0 -

you could make jello and put fresh raspberries in it and cool whip on top and you could make salsa for an appetizer??? you could also go to foodnetwork .com...u will probably find a bunch of ideas there!!! good luck!!!0

BLT BITES -
CHERRY TOMAOTES
BACON
SHREDDED LETTUCE
PARMESAN CHEESE
CHERRY TOMATOES - REMOVE THIN SLICE FROM BOTTOM SO THEY STAND UP AND CLEAN OUT CENTERS WITH A MELON BALLER.
CRISP COOK CRUMBLED BACON, MIX WITH SOME FINELY CHOPPED SHREDDED LETTUCE, TBLSP OF PARMESAN CHEESE AND A LITTLE LITE MIRACLE WHIP, STUFF THE TOMATOES AND WATCH THEM VANISH!
A HUGE HIT WHENEVER I SHOW UP WITH THEM.

Caprese salad bites
Tomato and creamy buffalo mozzarella slices with basil leaves and a drizzle of olive oil make a classic Italian Caprese salad. Now imagine it in small bites! We used grape tomatoes and mini cheese balls with a pesto coating.
Nutrients per bite
1.8g protein
2.7g fat
0.8g carbohydrates
0.2g fibre
0.2mg iron

34caloriesPreparation time 15 minutes
Makes 30 to 35 bites
2bunches fresh basil, about 3 cups (750 mL) leaves
1/4cup(50 mL) freshly grated Parmesan
2large garlic cloves, sliced, or 1 tbsp (15 mL) bottled chopped garlic
generous pinch of salt
3 to 4tbsp(45 to 60 mL) olive oil
8mini bocconcini or 200-g container mini-mini bocconcini (see Shopping tip, below)
toothpicks
1pint small grape tomatoes
(you can use a splash of balsamic vinegar for taste)
1.In a food processor, whirl basil with Parmesan, garlic and salt until puréed. Slowly drizzle in 3 tbsp (45 mL) oil while whirling. For a smoother pesto, add remaining 1 tbsp (15 mL) oil. Place half in a small bowl and half in a medium-size bowl. 2.To serve, slice mini bocconcini into quarters. If using mini-mini bocconcini, leave as is. Stir bocconcini into pesto in medium-size bowl. Poke a toothpick through a grape tomato, then through a pesto-coated bocconcini. Arrange on a large platter with the small bowl of pesto for dipping. If making ahead, cover and refrigerate up to 2 hours.0 -

Spread fat free cream cheese mixed with chili peppers, a little chili powder and onions on tortillas - roll slice to make pinwheels - serve with salsa0

Dessert:
1 (1.4 oz) package fat free, sugar free chocolate pudding
2 c. skim milk
1/2 c. light sour cream
1 (8 oz.) container fat free cool whip
3/4 c. (4 squares) chocolate graham crackers, crushed
-Mix pudding, milk, sour cream together. Fold in 1 1/2 c. cool whip.
-You can serve in individual dishes - layer graham cracker crumbs and pudding in dish, and top w/ cool whip.
-I substituted oreo cookie crumbles (ice cream toppings, so I wouldn't have to buy a whole package of oreos!) for the graham crackers.
-You can make the pudding mix ahead of time, but I'd wait to layer it w/ the graham crackers until you serve it - otherwise the graham crackers will get soggy. Unless you don't mind that!0 -

8oz tub FF cool whip
1 tsp pumpkin pie spice (or more to taste)
1-4svg pkg SF vanilla pudding dry mix
Combine everything and then fold in cool whip and use broken up cinnamon graham crackers to dip in!0 -

At Christmas, my boyfriend's mother made a delicious white chocolate/milk chocolate pudding pie with whipped topping that was only 92 calories a (BIG) slice using sugar free pudding, skim milk and lite cool whip that she found on that site. (She's diabetic and watches her weight)
If she hadn't told me, I'd never have guessed it to be remotely healthy!0
