    I just posted one in the shredded chicken thread. Another couple:

    1). Baked chicken breast served on brown rice tortilla with cheese, lettuce and fresh mango, (or pineapple, strawberry, eat), pico de gallo

    2) Green curry - sauté thinly sliced chicken breast with jalapeños, an onion and some super fine chopped ginger until tender. In the blender combine can of coconut milk, cup peas, half a small jar if green curry paste and juice of three large limes. Add liquid to veggie/chicken mixture and heat thoroughly. Serve over rice or green cabbage and bean sprouts

    Thanks your green curry recipe sounds tasty and easy .... A recipe I normally wouldn't do but I will give it a try .. Out of the box for me.. I want to be open to different ideas .. I appreciate your time in responding ..

    Slow cooker --> diced tomato, beans (any kind) tomato paste, chicken breasts, siracha + spices to tatse. Wonderful over spaghetti!
  • Pesto chicken - seal the chicken in a ziploc bag with some pesto for at least 30 minutes, overnight if you can. Saute for a few minutes on each side just to seal it, then finish in the oven.

    Fantastic with a light salad, and you can adjust the recipe based on your needs for the day (less oil, more veggies etc).

    Chicken breast sprinkled with curry powder and then marinated in orange juice. (1/4 - 1 tbs of curry to 1/4 cup OJ...vary to your own taste). Bake chicken in sauce at 350 for 45 minute to an hour. Pour OJ into saucepan and mix in a cornstarch slurry; heat to boiling and stir until sauce thickens.

    We grill ours after marinating them in a mix of soya, honey, garlic, crushed red pepper flakes (replace with paprika or cracked pepper if not a fan of spicy) and fresh ginger.

    Sounds fabulous! Never thought to put it over spaghetti though!! Great idea! I usually just use in tortillas or on rice. I like it!

    Tonight I'm having grilled chicken breasts with a salsa made of corn kernels, chopped sun-dried tomatoes, diced scallions, diced garlic, a minced (seeded) jalapeño, lime juice, chopped cilantro, ground cumin, a bit of olive oil, and salt and pepper.

    Edited to add: the salsa doesn't take much time to prepare, if you're handy with a knife, and you can adjust the ingredients as you wish. You could also add black beans for more protein.

    Easy recipe to for shredded chicken (use in whatever recipe you want. Amazing in burritos, enchiladas, etc.) -
    Put chicken breasts in pan with chopped onion and garlic, fill with water until just covered. Bring to a boil and then reduce the flame to low, cover with lid and let cook for 20-25 minutes. Remove from chicken stock and let cool enough to shred.

    Bake chicken mccormick grill mates smokehouse maple sprinkled on top (in spice isle or with spice envelopes) and then put lemon slices on top. I make it in bulk and use it for everything durning the week: green salads, chicken salad, tacos, whatever you want!

    Marinate chicken in lemon juice and with lemon peel, pepper, and if you like garlic, then cook like you would normally cook it (oven, skillet, etc). Has zing without added salt.
    Sometimes I just use basil, white pepper, ground mustard and cook as wanted.
    Chicken is so versatile that if there is a spice or combination of spices you like (besides maybe some sweet spices, even then...) use it on it!

    I use a 10oz can of the Rotel Tomato and Green chilis so it comes out a little less soupy. Also, when I added the recipe to "My Recipes" in MFP, I left out the flour tortillas, and just add them to the meal. Boneless skinless chicken thighs work very well, and I think give the dish more flavor.

    Grill on the George Forman grill and put seasoning on whilst grilling (does not add lots of calories like sauces can). I buy a chicken seasoning blend from the supermarket. Also, put chicken in microwave for 30 seconds once cooked with cheese on top until melted. I like spicy Mexicana cheese squares which also add another decent amount of protein.

    One of my fave easy ones, add dried rosemary with lemon slices or squirts of lemon juice and bake at 400 degrees until done. Goes very well with rice or baked sweet potatoes and roasted broccoli. Also, look up Tandoori chicken. I like that too.
