I like soup - spicy tomato/blue cheese, split pea, black bean, broccoli/cheese, curry lentil, chili, stew, etc.

Flatbread or pita pizzas, pasta or rice mixed with veggies and sauce, shakshouka, curried hard boiled eggs, dal, or huevos rancheros

Love these Zucchini enchiladas, and this baked penne with roasted vegetables (but I tweak it to lighten it up). These quinoa chipotle "meat"balls are great to freeze in portions, and these Soyrizo stuffed poblanos also freeze perfectly for lunches.

I like making baked tofu chips. They are a great alternative if you're craving chips. I liked my plain but you can season to how you like them. All I did was drain all the water pit of the tofu. then thinly sliced the tofu. Put it on a flat cookie sheet or anything that's flat will work. Then bake til crispy on 350• or til how you like them.
