Lean proteins, fruits and vegetables and healthy fat are all gluten free and dairy free. Stick to the basics, add in whole grains that fit within your dietary restrictions. Brown Rice, quinoa, sweet potatoes...all gluten free and delicious!

I think when you have dietary restrictions, eating more simple food as opposed to those "one pot meals" or casseroles makes it much more simple!

Yeah, don't do it unless you have a legitimate medical reason. Otherwise, it's just a fad diet with no health benefits.

If you must due to medical reasons (celiac's, wheat allergy, etc.) then there are groups on here for both those things.

Obviously, if you don't need to restrict things, don't do it.

Most gluten-free breads are disappointing at best, and usually higher in calories than their gluten-ful counterparts. Stay away from them. Schar makes pretty good breads, but they're also expensive. Learn to read labels on everything because gluten is in more than just wheat; it's in barley and rye too. Most packaged cereals are going to be out now, except for Rice Chex and things specifically labeled gluten free. You'll save a lot of money going GF if you don't eat like you did before, because you won't be spending money on expensive GF products.

Dairy I don't know as much about. There's a wealth of non-dairy milks. Rice is the easiest to digest. Again, most of these are gonna be more expensive than your cow milk. Nutritional yeast makes a good substitute for cheese. Tofutti makes a vegan cream cheese that makes an awesome cheese cake. They also make a vegan sour cream, but I haven't tried that.

Basically, play around with stuff until you find what works. Having other starches is how my BF does it. Stir fry with rice or quinoa, meat and potatoes, stuff like that.
