High Protein Manicotti and its Tasty!

I am a pasta addict, :love: and so I am always looking for ways to make my pasta dishes healthy. In this one I wanted to focus on Protein.

As always feel free to adjust it to your liking, add more veggies, or more meat, or whatever!

I also make two extra servings so that my husband and I each have a serving for lunch the next day.

Here is the recipe and be aware, 3 noodles is a serving, HOWEVER it was enough to stuff me full. It is a huge amount of pasta. and to that I say THUMBS UP! :bigsmile:

Beef Manicotti-serves 4

INGREDIENTS:

12 Barilla Manicotti noodles
1/2 pound of ground beef (90/10 cooked)
2/3-1 C 2% low fat cottage cheese
2/3 C chopped onions
1 tbs Chopped garlic
2 tsp Italian seasoning
2 1/2 cups Red pasta sauce (I use safeway brand)
1 C Mozerella Cheese


DIRECTIONS:

Pre heat oven to 425 degrees.
Boil Manicotti noodles for 7 minutes. While Noodles are boiling, in a bowl, mash the cottage cheese until its a little more pasty. Then combine Cottage cheese with the Hamburger, Onions, Garlic, Italian Seasoning and 1/4 cup mozerella cheese. Mix well.

Drain and rinse with COLD water, the manicotti noodles. once cool to the touch set aside.

In a baking dish (big enough to hold all the manicotti) spread 1 C pasta sauce in the bottom of the dish, this is to coat the bottom of the dish so the noodles don't stick.

Stuff Manicotti with hamburger mixture, and lay them in the baking dish. once all Noodles are stuffed take the remaining pasta sauce and pour over the noodles, there should be just enough to coat them but not burry them.

Cover with Tin foil and cook for 25 minutes. When done, pull from oven, uncover and add the remaining Mozereall cheese, and bake uncovered for 10 minutes.

Remove and enjoy! Each serving is 3 manicotti noodles.

I served mine with fresh steamed green beans. It was delicious.

Calories - 453 (for a huge amount, I probably wont eat a full serving next time it was so much)

Protein - 33
Fiber - 3

    I used to be a pasta addict too. I had dreams about noodles!! Have you ever tried spaghetti squash? It only has 44 calories and 10 carbs per 8 oz. serving. Pasta has about 220 calories and 40 carbs in only 2 oz. I find it delicious and have been able to completely cut out pasta.

    BUMP! Looks good. I never use cottage cheese for anything and think it might be time to try it out.
