I don't know about oat pancakes but I've made banana pancakes twice now and have loved them both times. Recipe: 1 ripe banana mashed (mine was very ripe), two eggs, and 1/8 tsp each of baking powder and cinnamon.
Beat them all together and cook like a pancake in a non-stick skillet over medium heat for about 45 seconds on each side, depending on your skillet and heat level.
I top each pancake with a dab of pure almond butter as I stack them (for a total of 1 tbsp of almond butter) and then pour about a tablespoon of pure maple syrup over it all. It tastes like the best part of French toast with banana slices on top. This recipe makes about ten 3-inch pancakes, or a 3-inch diameter pile about two inches high and is 300 calories total the way I top them.0
