increasing vitamins and minerals without carbs and fat

I am doing well with keeping up on my overall calories, but would like to get some of the other nutrients closer, I seem to be low on the recommended iron, potassium and calcium. Some days I am low on vitamins A and C as well. Any ideas? I try to eat healthy with fruits and vegetables and almonds daily.
