Lower Carb Vegetarian Meals

Hey folks, I thought I would bring my query to the message boards!
I am a vegetarian (please, no vegetarian-bashing responses, we all have our own lifestyle choices) and have l lost up to 55 lbs, maintained 35 of it for two years. I am switching to a lower-carb eating regime (aka, not diet because "diets" fail) because I want to get rid of excess body fat and hit that goal weight! ((I know, it's really not about weight, but how you feel/look ... the scale is just that: a measurement tool for me)).

I would LOVE meal/recipe suggestions. I do eat dairy and eggs.

    I will enjoy the responses on this as well.....would love new ideas for lower carb but maybe higher protein veggie dishes!

    Eating at a calorie deficit should address the body fat issue, but if you have other reasons to avoid carbohydrates tofu and tempeh are good sources of protein that are also relatively low in carbohydrates. Seitan is made from wheat gluten, which is the protein in wheat, but doesn't include a lot of carbohydrates (the rest of the wheat is washed away so the gluten can be used). Vegetables have carbohydrates, but many of them can still be included on lower carbohydrate plans because many are low in carbohydrates for their volume.

    I, too, am low carb vegetarian. Here are a couple wonderful cookbooks: "Carb Conscious Vegetarian" by Robin Robertson; and "Low-Carb Vegetarian" by Celia Brooks Brown. Lunches for me usually consist of frozen mixed veggies, Seitan/ tofu, coconut oil (for much needed healthy fat), a few peanuts. Add seasoning to vary flavors. Hope this helps.

    Eating low carb wont get rid of excess body fat. Eating at a calorie deficit will. You don't need to eat low carb to do that.

    Soup, stir fry, vegetable noodles and rice, wraps made with greens/lettuce

    Frittata is a delicious way to get loads of vegies, protein and fats. You can use whatever vegies you like and make it as carb dense as you want. I often bake big ones in the oven, and portion out - it's freezable, and you can eat it hot or cold.

    Chia pudding with protein stirred through - WPI is low carb, low fat and bumps your protein up easily.

    Green smoothies made with greens, berries (lower carb), protein powder, avocado or nut butters for fat.

    Forksoverknives.com has a great website and app with vegan recipes. Some are have carbs, but because they focus on plant-based only and non-processed foods, they are usually very low simple-carb and all vegetable based recipes with plant proteins.
