Coconut Flour Pancakes
These are super yummy! I got this recipe from here: http://www.cheeseslave.com/2008/10/17/coconut-flour-pancakes/ The only thing I changed was that I added a bit more coconut milk, added cinnamon, and doubled the maple syrup/honey.
3 eggs
3 tablespoons butter or coconut oil, melted (plus extra butter or coconut oil for cooking the pancakes)
4 tablespoons coconut milk
1 tablespoon raw honey or pure maple syrup
1/4 teaspoon cinnamon (adjust to taste)1/4 teaspoon sea salt
3 tablespoons coconut flour
1/2 teaspoon baking powder
Whisk together eggs, butter/oil, milk, cinnamon, sea salt, and syrup/honey until combined then add in coconut flour and baking powder.
Pour just under 1/4 cup on skillet for each pancake. They may take a bit longer than regular pancakes but they'll bubble up just pancakes when they are ready to be flipped.
Top with real butter and pure maple syrup! Or you could top with almond butter, fruit, etc.
Makes 6 pancakes, 2 per serving.
