Black bean tostadas!

okay so I am slightly obsessed with these little beauties! I've made them about three times a week! Easy, super delicious, low calories!
1 can black beans-no salt added
1/4 purple onion chopped
1 jalapeño seeded
1 garlic clove minced
1/8c water

Add all to a sauce pan and bring to boil, reduce heat and simmer 25 minutes covered. Mash beans slightly to thicken.

6 white corn tortillas 50 calories each. Heat oven to 425 and place directly on rack. Bake for 3 minutes, flip bake for 3-5 more until brown.

I add some mashed avocado to top of tortilla, 1/4c black beans, chopped romaine hearts, diced Roma tomatoes, and top with some feta cheese crumbles. Makes 3 servings of 2 tostadas each. Amazing flavorful!

    i've been on a tostada kick recently. 2 corn tostadas = only 150 calories! i like to top with vegetarian/no fat refried beans, purple onion, jalapeno (pickled or fresh), hot sauce and a little cheese. last week, i smothered them with my leftover, low-calorie chili. satisfies my mexican restaurant cravings without all of the calories.
