Meal Planning for Busy Days

Starting next week I'll be working full time and going to school part time. I already eat lunch at work every day, but this means there will be 2 days a week where I'll be eating lunch and dinner away from home.

I'm looking for some easy meals that I can bring with me, that don't require tons of work. Any suggestions? (unfortunately I can't eat tree nuts or fish, everything else is ok though!)

    SOUP!! I always make a huge batch of soup, sometimes two or three different kinds, and freeze them in the ziplock tupperware. If I'm running late, or don't feel like making something, I just grab a soup from the freezer. Although it takes a couple hours out of my Sunday, it makes meal planning a breeze!

    My go-to is simple... get some pre-cooked (or pre cook yourself, preferably) chicken, throw in some rice/a sweet potatoe, and veggies. Separate out your portions, put them in containers, and WAH-LAH! Meal prep 101. Just make sure you enjoy whatever you decide you're eating. Use different rubs/soy sauce/hot sauce for flavor.

    A crock pot is your best friend on this one, it's so easy to make a big batch of something and then just portion it up. Also, if you're on reddit, there's r/MealPrepSunday/ where people post the healthy lunches they've prepped for the week, it's really good for getting ideas.

    Honestly, on days that busy I tend to just snack a lot at work. I keep string cheese and sometimes yogurt in the fridge, I keep pre-portioned almonds and Slim Jims (my sekrit shaaaame) at my desk, and sometimes I stash Fiber One brownies or small Rice Krispie treats in the pantry. Then all I need to do is pack one good, nutrient rich meal (giant salad for lunch with plenty of grilled meat, good dressing, etc. or baked chicken and steamed veggies in huge portions for dinner) and I get through the day just fine.
