Ribs and. . .?

I have pork ribs in the crock pot today, but I'm looking for a healthy low cal/low fat option for side dishes, that could possible entice my 3-year-old. I'm salad-ed out, so something else would be great! Any suggestions???

    Squash any kind. I like broccoli. Corn on the cob or off.

    Sweet potatoes go nicely with pork. I would peel and cube them, toss with olive oil and a little sea salt, garlic powder and rosemary. Pre steam in the microwave for about 7 minutes, then roast in a 400 oven for about 15-20 minutes. If you are short on time, the smaller the cubes are, the less time to cook.

    Ribs ... yum!

    Mashed cauliflower - if that won't work do half potato and half cauliflower. It will taste similar to mashed potatoes but have a good veggie in there.

    Broccoli or green beans is usually what i have with pork ribs.

    I'd go with some cauliflower with low fat cheese on top, although of course you could also go without the cheese. Mashed potato sounds like a great option, too. I'm not a fan of mashing things up, not even for kids... but there's always the option of using applesauce. But i'd only use that scarcely, too.

    My 2 year old loves corn on the cob! We put the corn cob holder at the end so he can hold it. He goes crazy just two days ago he had 3 of them

    He also loves steam brocolli and cauliflower. Then I put a little spray butter on it.

    He also loves carrots and ranch dressing.

    I think he likes to eat what his older sister does.

    Fire up the grill and burn some squash/zucchini. Alternatively, I love regular beans, flavorful, loaded with complex carbs.

    I love the grilled zucchini idea! or steamed cauliflower and broccoli, my kids eat all these with some ranch and they love it
