Cheap, Vegetarian, Low Carb Dishes...

Does anyone have any good recipes? I tend to incorporate tofu and quorn where I can but I am not a very good cook (although I am getting a wee bit better). I just need some quick, easy, cheap ideas. :)

    Stir fry veggies with tofu. I use the bagged frozen stir fry veggies. Season with garlic and onion (I use granulated), soy sauce and/or ginger. You could add a bunch of bean sprouts, too, since you won't be using rice or noodles.

    Define "low carb" -- Chick Peas are great source of nutrients for a Vegetarian. 1/2 cup equates to 16 grams of carbs and will keep you satiated. I like to keep it simple with them by roasting them with a little olive oil or mixing them with spices or throwing them on a salad.

    You can make a low carb cauliflower "vegetable fried rice" (omit egg if ya don't eat them) & eat as is or as a base to a stir fry. Get a spiralizer & make zucchini or sweet potatoes "noodles" with an Alfredo or pesto sauce. Throw hemp seeds or flax meal into whatever you make for some protein.

    Low carb and vegetarian is tricky. That does leave you with much other than fats - which tend to be expensive (nuts, seeds, avocados, etc)

    Tofu is a great start. The only thing I can think of is stir fries with less expensive veggies (possibly frozen so you don't run the risk of wasting produce and $$) and salads. Big bags of spinach aren't much money and they can easily be dressed up with a few simple add ons, tofu being one of them (I like to coat mine in chili thai sauce and pan sear it)

    Again the options are quite low cal when you take out carb options, which might make reaching your calorie goals hard.

    Carbs are inexpensive and can go a long way to helping a vegetarian diet - oats, beans, whole wheat pasta, rice. Cheap, tasty, versatile!

    Miso soup. Add tofu, any vegetables. Miso is easy, miso, hot water, tofu, veggies.

    I really like the sound of the 'noodles'... That would be a good way to mix it up a bit. :) I'm just sick of my main foods being beige, I'd like a bit more colour. Thanks!
