Need Tips/Suggestions

Hi My Fitness Pal,
I was hoping that some people could help. I am starting to get super discouraged.
I track my food Monday-Friday and the weekends I stay very healthy.. constantly on the go so hard to track.. but with the exception of maybe some alcohol (shot of vodka, not mixed with anything) I am generally pretty good!
I also go to the gym Monday through Friday.. 3 days of the week I go at least twice a day. The other two days I go once a day. I burn anywhere from 400-900 calories per day. I do cardio and about 1/3 of my time at the gym is dedicated to some weight training.
It is getting really hard for me because I am not seeing the scale change.. I have been told I look a more toned (you can feel it too) but super discouraging. Clothes still fit the same in my eyes, too.
So- I don't want to hear "muscle weighs more than fat and you are probably gaining muscle" while that is true, I have a lot of FAT to lose. It is not like I am stick skinny with nothing else to do but gain.
I am asking that you please take a look at my diary the last few days and let me know if I am doing anything "wrong" or if I am just being impatient, etc. I have been doing this for almost two weeks now.
I appreciate the insight!
*EDIT*
Sometimes I use the fast food places as measures. For example at work today I had a protein burger and I used the one from in-n-out as guidance... I don't actually go to any of those places. LOL. I measure my food as well

this is going to be really hard to tell if u don't log at all on the weekend. also how long have u been stuck? and does stuck mean u haven't lost anything or u are just losing slowly?0

First initial thoughts - its only been two weeks.
If you've significantly increased your exercise then you could be retaining water, or you could be at that point in your cycle where your body likes to retain water.
But also, I see missing days from your food log - you log items in cups whereas anything that isn't a liquid should be weighed and entered as its weight. There are some homemade entries - are these yours or someone elses?0 -

are you logging butter, oils, seasonings, etc0 -
Your diary looks good, and you seem to eating properly. Give it another week and see if you start to see some results.
Sometimes it takes our bodies longer to process the changes. Don't get discouraged0 -
ah i now see its been not even two weeks. if working out is new to u, u are probably retaining water. give it a bit. and log your weekends. it might be a pain but if you are eating out alot on the weekend u can totally blow a weeks worth of healthy eating. also if u do have a food scale it doesn't really look like your using it, everything is in cup form. now that being said i don't weigh most my food just meats and heavy starches. your food choices are good though so keep it up!0

These are my entries. I was thinking possible water retaining too. I don't drink enough water. Which could also be part of the problem0 -

Stuck or I go up and down constantly0 -
Also check if you're carb sensitive, it might be a factor to consider0

And that's pretty much how I gained 15 kg over 4 years.
I was consuming close to the correct amount, but those weekends put me just enough over so that I gained weight slowly but surely.
