anyone tried carrots in porridge (/oatmeal)?

I've seen recipes for carrots in porridge and as these two things are my two favourite foods I wondered what your verdict is on having them together? Does the grated carrot stay in bits or does it dissolve into the porridge?

    Could work. I would add some spices like cinnamon, ginger, cardamon to make it taste like a carrot cake. The carrot won't dissolve if you don't cook it to 'death'. Depending on how long you cook your oats, just add the carrots a bit later.

    grated carrots will keep their shape in porridge. ^^ try adding the listed spices above with some toasted coconut and raisins, really delicious carrot cake type porridge. :]

    Groovy. Thanks for the advice! Carrot cake is my second favourite (can't beat mum's boiled fruit) so I'm sure I will enjoy

    Just googled some recipes. You can find baked, cooked and overnight carrot cake oatmeal online ;-)

    Inspired by what I read, I Just mixed my own overnight oats with the ingredients on hand

    20g oats
    5g chia seeds
    45g carrot finely grated
    100g alpro coconut milk (like almond milk, but coconut)
    120g low fat greek style yogurt
    cinnamon
    spice mix for a spice bread

    tasted pretty yummy and is now in the fridge until tomorrow. Could imagine adding some chopped nuts or raisons would be good too.

    Jacleepin - found one with egg whites and protein powder too.
