    I love to make minestrone soup in my slow cooker and take that topped with a little cheese/sour cream.

    heat some vegetarian refried beans. top 2 corn tostadas with beans, cheese, lettuce, tomato, jalapeno, onion, hot sauce and sour cream. mexican comfort food without all the calories.
