Chicken=Boring?

Hi all,
I have two large chicken fillets in the fridge for tonight's dinner. I am a bit bored of making them Mexican style or putting them in a curry. Would anyone have any chicken pasta recipes or stuffed chicken recipes that they could share?
I also have low-fat creme fraiche, herbs, parmesan, lots of veg, pasta, potatoes and rice in the kitchen. Lookin forward to your suggestions!

    I don't have an recipe but I like to make a little pocket in them and stuff them with spinach, goat cheese and roasted red peppers. Then I bake off in the oven. You could really stuff them with any veggies and mix it up. Sometimes I'll try it with whatever I have laying around.

    The other way I like chicken is with marinated in lemon & garlic and fresh herbs (like basil or cilantro) then broiled or grilled.

    Do you have a George Foreman grill? Throw some Mrs. Dash on them and grill those bad boys...Then you can make Chicken Sandwiches with veggies on the side!

    add some parmesan cheese on them and bake them! They are yummy!

    Poor chickens. Not only do they get killed in their millions but people find the meat they are killed for boring!

    Stuffed Chicken breast:

    After trimming and rinsing in cold water, butterfly each chicken breast.
    Layer baby spinach, fresh sliced tomatoes, fresh chopped garlic, and feta cheese on bottom side of butterflied chicken breast. Season with pepper, onion powder, and other desired spices.
    Fold top side of chicken breast over stuffing. You may use cooking twine to tie chicken breast together, I don't find this neccessary.
    Bake at 350F for 30-40 minutes or until juices run clear.

    Serve with vegetable of choice (broccoli, cooked spinach, raw spinach salad, side salad, etc) and starch of choice (brown rice, seasoned and baked red potatoes, whole wheat pasta with marinara sauce, etc.)

    I just discovered Philidelphia Cooking Cream (in the store by the cream cheese). Only 110 calories for a whole serving, but I only use half a serving for myself and it is pleanty. It is SO GOOD! They have tons of different flavors. I have only tried the savory garlic one, but I have heard others are good too! I just cut up a bunch of different veggies (whatever I have around the house) and cook them on top of the stove, add my chicked (pre-cooked) and add in the cooking cream (serving size is 2 tablespoons). When my pasta is done I toss it all together. The serving size is 1 cup for the pasta, so I can usually get two meals out of it (for myself) all for just around 300 calories! It is so yummy!

    I know I'm going to regret this, but...do you ever have anything nice to say? I see you commenting all over the place and I have YET to see ONE positive comment anywhere. This site is supposed to be for motivation and honey, that AIN'T what you're sellin'

    i put mine on the george forman grill because i'M doing dr atkins but you can brine the chicken in some water and some of your favorite spices than you can fry in a littel olive oil

    that sounds amazing! I have some gorgonzola left at home, think that would work just as well??

    My family goes crazy over chicken kebabs! (if you don't have metal skewers, then SOAK the bamboo ones first, and it will splinter less!!)

    Either cube or slice chicken & rub with fresh minced garlic, a drizzle of sesame oil, salt & pepper to taste.
    Toss them on the grill until done. :)

    We serve them with jasmine rice & grilled veggies!

    I've done this same thing with salmon... but adding a few pine nuts (although I'm not sure that "makes" the recipe)... it is unbelievably good!!

    A really good really easy one!

    Cut into strips. Dip into a honey / apricot jam mixture (recipe calls for 1/2C honey and 1T apricot jam. I used pear since it's what i had. raspberry would probably be good to, possibly.) Then dip in Panko bread crumbs. Bake until done and crispy. I think probably at 350. I put them on a wire rack on the pan so both sides browned and didn't stick, instead of putting them right on the cookie sheet.

    You can make it with a citrus rice pilaf. Google a recipe there. Very tasty!

    Panko bread crumbs are a Japanese style of breads crumbs that are crunchier in texture. They aren't finely ground like regular bread crumbs, so you can get that crunch that you normally get with fried!

    2 egg whites in a shallow bowl, and crushed cornflake crumbs, paprika and mixed herbs in another shallow bowl. Dip chicken into egg whites, then into cornflake crumbs. Panko would work too, I like the sweetness of cornflakes.

    Place dipped chicken on a baking tray coated with nonstick cooking spray. Cook for 20-25 minutes, turning the chicken halfway through.

    Yeah, I bet gorgonzola would be great! Or any other white cheese of choice: low fat cottage cheese, low fat riccotta cheese, real mozarella cheese....I think any of these would be great substitutions.

    I like to boil or grill it, mix with buffalo sauce (Franks Red Hot is my favorite), then throw it in a low-fat wrap with lettuce, tomatoes, and some feta cheese. YUM!

    like 1113CW, i like to stuff mine, butterfly them add in low fat mozz and ricotta with spinach

    My family all love a really simple poached chicken breast - simmer them in good chicken stock for about 15-20 minutes.

    Any leftovers are great in salads and sandwiches, and the leftover stock is excellent for soups or risotto.
