Chicken and Shrimp-Help?

I am one of those people who could eat the same thing every day for a year and not get bored. That being said, my husband isn't! He has recently decided he wants to start eating healthy with me. Previously, I was fixing separate meals for us but now that we are eating the same thing I find it difficult to make something healthy that he actually likes.

Any suggestions on how to prepare chicken breast and shrimp? Anything spicy or with a "cream sauce"-like Alfredo is out. I married a picky eater!!

  • stir fry!! either the chicken or shrimp or both!! That being said you need to like veggies!!

    Also chicken on it's own. i like lemon pepper, italian, and cheese stuffed chicken breasts.

    Spanish shrimp is a quick and easy one over brown rice yum... Here is a link to a recipe. I would cut the olive oil and increase the lemon juice to make it a tad less fattening

    How about chicken breasts with salsa and provolone cheese on top, serve with a side of brown rice and a salad, it's delicious!

    I just bake the (boneless, skinless) breast in the oven at 350˚ for 20 minutes, add the slice of cheese and return to oven until it melts, top with salsa and serve.

    Chicken, cheese and ham rollups are great too :)

    Flatten chicken breast (I put it between 2 sheets of waxed paper and beat it with my rolling pin lol), then put 1 slice of ham and 1 slice of cheese (whatever kind you have on hand is fine). Then bake it at 350˚ for 20 minutes.

    That sounds like something he would really like, thank you! I don't actually have any ham at home now, but I'll probably make it next week!

    one thing we do in my house is BBQ shish kabobs. you can do ones with chicken, shrimp and add veggies and different sauces. in the end you are cooking the same thing but changing it up to please everyone.

    He usually picks the veggies out (he is such a kid) but I'm thinking maybe he'll have to learn not to do that. :happy:

    Getting in on this one lol =D. I love both chicken and shrimp!

    I fry chicken breasts (seasoned to taste, I love McCormick's montreal steak seasoning myself) in olive oil, sunflower oil, and a bit of real butter. If I'm cooking for the whole family, I'll cook the trimmed off fat in the oil mix first, to give it a bit of chicken flavor. Once the chicken breast is done, I make a gravy out of the remaining oil using brown rice flour, again seasoning to taste (making gravy with brown rice flour takes some practice, don't give up!! It's SO worth it!). I serve the chicken over either whole grain bread, or seasoned brown rice. On the side, I cook fresh mixed broccoli, cauliflower, and carrots in seasoned butter, but only until they're warm (still totally fresh!). The butter makes a light, seasoned coating over the fresh crispy vegetables.

    Now, you're probably wondering at the caloric content. Truth be known, I haven't a clue. It's one of the tastiest dinners I make though...and most people love my food. Additionally...I'm also a person who can eat the same thing over and over lol...and I've lost over 15lbs in just over a month (at 35yrs old!) eating this for dinner almost exclusively (at least 3x a week, sometimes more...substituting pork loin chops on occasion)...along with four or more other healthy, flavorful meals a day. I wasn't counting calories either. 5 eggs for breakfast (cooked in real butter), protien smoothie for midmorning, large turkey sandwich on a bagel with cream cheese for lunch, chicken/mozarella/spinach olive oil salad for midafternoon, and this for dinner. I ate just as well the other days of the week, and my exercise level at the time would be classified (generously lol) as 'moderate'...light cardio a couple days a week, and VERY light weight training (no spotter...and little knowledge of effective exercises) along with it.

    Anyhow...nikki91950...share the teriyaki recipe!!! And just in case you don't lol...I'll be PMing you too =p.

    frankly, I like my chicken pretty plain..cooked on the grill, indirect heat. Coals on the side, chix in the middle, for about a hour. Perfect.
