Supe's Kitchen is Back!
In the beginning the Supe's Kitchen was designed to direct those who needed a healthy change in their life. It began with me being diagnosed as a type 2 diabetic. After having been told for about five years that I was a pre-diabetic, I finally crossed over to the full blown diabetic side. Not a side I wanted to be on, but with my eating habits, coupled with my outstanding workout routine...NOT... it was not a matter of "IF" but when. So as I stared at the bottle of pills on my counter that I was supposed to take twice a day, I thought......Nope...... you did this to yourself, so get yourself out of it. So I did! I combed through every article I could find about type 2 diabetes and I found that it is reversible and reversing it was what I intended on doing. Long story short.... I identified the right foods that would aid in weight loss, but would also help reverse the condition I had created. I learned how foods interacted with the body and how to put them together for optimal health benefits, along with weight loss. I introduced exercise over time, with simple things like walking and then jogging. I utilized everyday routines to incorporate new ways to get whatever exercise I could, however so small, and you know it worked. I lost 52 pounds in 11 weeks. At my 3 month checkup for my type 2 diabetes the doctor said "keep taking your medicine, it seems to be working." I just smiled and said, "I never took a one." He said whatever you are doing, keep doing it and make sure you tell everyone you can, because it works! So I did that very thing. I started the Supe's Kitchen here at school for our staff members. I introduced them to the healthy meals that I had put together, along with the exercises that could be done here at campus. We had weekly meetings on Wednesdays after school. In seven weeks, my staff had lost a total of 59 pounds and walked a distance from Mason Public Schools in Mason, Oklahoma to the mouth of the Grand Canyon National Park. Our staff received a financial reward from a corporate sponsor for a job well done. That reward was donated to Relay for Life. I was so proud of my staff. But most of all, I was proud of the life style they had chosen, a life style of "Eating to Live" not living to eat. That was more than two years ago. Time has passed and bad habits have started creeping back in. I remember! I remember how I felt before Supe's Kitchen and I remember the feeling of frustration with myself for letting type 2 diabetes get a foothold. I remember that I said "never again" and so, before I continue to head further down that road to diabetes, I choose to head back to the kitchen..... Join me on this journey back to a healthier me and you. I will post recipes and exercises that I will incorporate in my daily routines. My goal is somewhere back around 190#s. FYI that is about 30#s from here. See you there!

This inspires me and gives me hope! This past week I got the news I had crossed over to being diabetic, after having years to change my bad habits and avoid this diagnosis. Now, I must face it. And like you, I want to reverse it through weight loss and new, healthy habits. I would appreciate any food suggestions you could offer, or if you have a group here on My Fitnesspal, I would welcome the support of others with the same health challenge. I know exactly how you feel! Years I spent as a pre-diabetic knowing full well I would cross-over. I will post several great recipes that I found very appetizing but also fired up the metabolism. Hang in there it can be done. A go to quick meal for me is... OLE brand tortillas (high in fiber very low carb and very low fat. Lots of protein per tortilla. High in omega 3's. Put low fat ham, veggies and any lowfat dressing or mustard and make awrap. Very filling! Has the right combination s of foods to get your mmetabolism going. So many ways to use these tortillas for a healthy change. Heres another tip... incorporate as many colors of veggies as possible in your salad. It will boost the areas of the body that need it to process the foods properly and help maintain your health. Remember: Eat to live, Not live to Eat! Thats my motto!0

As I struggled with the up and down glucose levels I found apples and pears as a snack between meals or sometimes just for breakfast was an excellent way to stave of hunger or the desire to eat but also balanced my sugar levels.0
