Hello everyone,
I am a stay at home mother of a two year old boy. I have really been trying hard to loose weight since I had him and am finding it really hard to stay away from fast food and delivery. My husband works a strange shift (4pm-3am) and go see him for lunch at 9pm Monday through Friday. My son takes a nap from about 4-6. Anyways...I am wanting meals that are simple and fast that I can prepare in less than two hours that I don't have to constantly watch. My son really likes veggies and fruits. We're not a picky family but would like to be a healthy one.

    Check out pinterest. And skinnytaste.com. 99% of the daily meals I prepare take me less than 30 minutes to make.

    Check out my diary and you can see a lot of examples of what we eat. Super fast and healthy.

    You have a really cool alone-time shift just before supper! If I were to do new mommy over again, I'd use that time in a hot bubble bath with scented candles.

    As someone else suggested Skinnytaste.com has a ton of awesome recipes. And my advice is to take advantage of your crockpot. I also have a 2 year old (and I work almost the same shift as your husband 4pm-4am) and the crockpot is what works best for me. You can just throw some stuff in early on in the day and just wait for it to be done at night. It usually takes 10 min of work :) Skinnytaste has a lot of awesome crockpot recipes if you want to find them there as well

    I have wraps every night.... You just fill them with whatever you have, they usually take me about 10 minutes....:)
