Have been dieting, restricting calorie intake to 1000-1200 and exercising, ensuring I log EVERYTHING but I'm not losing weight. How long does it take to notice some movement?

If that were true you'd be losing weight. Something about your measurements is off0 -
How are you validating your calorie intake? Are you weighing food with a kitchen scale or using generic "medium banana" type entries? Are you honestly and truly logging everything you eat and drink?
How are you validating your exercise calories? Are you eating all of them back?
BTW, your calorie intake is really too low unless you are super small or that's NET calories not everything you are eating for the day. You aren't doing yourself any favors by eating too little. You'll lose a good amount of muscle with the fat and then it'll be even harder to lose weight the next time around.0 -
Personally if I eat less than 1,000 calories a day (regardless of if I'm working out or not) I don't lose any weight. Sometimes it happens, you have a couple busy days and eat way under. I always find that on those days the scale hasn't budged a bit and it actually takes me a couple more days to get back into losing. Try to be eating at least a thousand a day plus more if you're working out.

Don't worry about "how long". I know it's hard (I get very impatient), but just remember that there is NOBODY that eats and exercises like that and is still overweight. If you're truly doing good, it will happen. Eventually.0

Salty foods are not your friend right now. You can gain and lose 5 lbs from day to day due to water weight.
Maybe check your nutrition when you log your foods, make sure you're being as accurate as possible and measure and weigh your foods.0
