Looking for a chicken recipe

Hello!
I'm looking for a super easy yet not too boring (frozen) baked chicken breast recipe to eat for dinner tonight. Does anyone have something they could share? I'm not going to lie, I'm hoping not to have to grocery shop tonight, just not in the mood haha (though I have so little in my fridge right now... so it might be unavoidable). Maybe something with only a few ingredients.
I'm a tad tired of my usual lazy chicken recipes.. which are usually something like a mustard-dill, salsa, or just seasoned with Tex-Mex or Italiano spices.
Please no dairy - I'm in the middle of an allergic reaction to some crazy amount of dairy I ate on Tuesday... Whoops. Itchy, itchy.
Thanks!

What do you have in your fridge/pantry right now?0

I make chicken recipes all the time but I'm not sure what kind of flavor your wanting. If you want something really simply just add a few spices to it and bake it. I like to add pepper, garlic powder and sometimes mccormick's lemon and pepper seasoning. Or u could go even simpler, just add honey. It's really good. When I do honey I add orange juice, olive oil, lemon juice, salt, pepper, and paprika then I pour honey on the top. Or..u can add baby spinach to a dish then put chicken on top and add garlic powder, onion powder, Italian seasoning, pepper, & salt. Add a few chunks of tomato then bake. But like I said I don't know what kind of flavor your wanting but hope that helps.0

I have an onion and some garlic. ... salad dressing and cranberry-bbq sauce... really old celery that I should throw away... an apple... Pickles. Quinoa, rice, pasta, tomato soup and mushroom soup (condensed), tuna. Sriracha sauce... umm. Red wine. And nachos. I also have frozen mixed veggies and some General Tao sauce. And my spices include some usual ones as well as Tuscan, Italiano, lemmon pepper, Greek, Tex-Mex, Montreal steak spice and some salmon seasoning.
Yogurt also, but I'm going to stay away from that for a week or so.
I also might be coming to terms with the fact I might need to pop into a grocery store (especially after listing the food that I have!).
Oh and just a note - I'm not picky in terms of flavour so I'm up for whatever.0 -
My new favorite thing to do with chicken breasts is poach them and then shred them using the mixer. It really works! Then you can use the shredded chicken to make sandwiches, salads, casseroles, soups, tacos, etc. I make a bunch and then weigh it and portion it out. Freezes well too. Also very fond of making cutlets (cutting them in half so they aren't so thick) and saute with a little olive oil and add some veggies, love a little lemon and capers too. Serve it with whatever you like.0

Oh I have all those things. I even have orange juice boxes that I forgot about haha. What proportions would you use for the ingredients?0 -

This also sounds really good. Maybe I'll also do some meal prep this weekend.0 -

@TheKatieMonster u could add the cream of mushroom to it. I do this for my family and they really like it. I also make
some rice with it and put a hint of the soup on the rice after everything is done cooking and add the chicken on top. It's pretty good. After putting the soup in the dish I add a little water to the can and mix it to the soup so it's not so thick. Then add the chicken and spoon some of the soup over the chicken so it's coated. Or u could try it with your cranberry-BBQ sauce but that sounds like it would be better if the chicken were grilled.0 -
You could marinate the chicken in the salad dressing for about a half hour, then sautee it with the onion garlic, and really old celery. Splash in a bit of red wine and simmer for 10-15 min. I'd serve that over the rice of pasta.
Chicken and mixed veggies cooked in the general tao sauce over rice sounds quick and easy as well.0 -
Thank you These all sound more interesting than my usual go-tos.1

1/4-1/3 cup honey mixed with equal amounts of Dijon mustard, cracked pepper, and a little dried thyme or rosemary. Stir together, cover the chicken and bake. It's awesome with boneless skinless chicken thighs too.0
