yummy strawberry dessert

Ok so my mom has made this for years and now I tried it the sugar free low fat way and it's so good.

1 large container non fat cottage cheese
1/2 to 1 container sugar free or low fat cool whip
1 package sugar free jello mix I did cherry or strawberry just dump the packet into the cool whip and cottage cheese.
Mix those up really good

Add cut up strawberries grapes mandarin oranges and pinneapple.
Put as much at you like in. I do about 4 cups or more.

This is a fruity light dessert. Better than the original full sugar/ fat version my mom used to make. It makes a lot like for a big BBQ or party. Let it sit for a couple hours in the fridge to firm up a little.

    I also have a spaghetti squash casserole that's to die for.

    1 spaghetti squash cut in half length wise scrape out seeds bake for 40 min or until soft.
    Using a fork scrape out squash I to a bowl.
    While it's baking lightly saute 1/2 red bell pepper.
    Mix in 1/2 cup bread crumbs
    Bell pepper
    1 egg or egg substitute
    1 tablespoon garlic
    1/2 cup fat free sour cream
    1/2 cup soy cheese or regular
    Diced chives about a 1/4 cup
    Mix it all together put in baking dish like a brownie pan. Sprinkle soy cheese on top and bake for 30 min. 350. I never measure so this is all guessing. It always turns out yummy.

    I have made this recipe for years with a variation. It is a request during the holidays from family and friends. I normally use LF Cottage Cheese, LF Cool Whip, LF Sour Cream, SF Jello (Any Flavor, my favorite is orange). Then I add Mandarin Oranges, crushed pineapple and chopped pecans. This recipe is so versatile, you can do any combination of flavors, fruits, nuts, etc.
