Stuffed Mushrooms Ideas?

Hi, I recently discovered stuffed mushrooms lol and I find they're filling, tasty and nutritious as a vegetarian. Ive been using spinach and 40cal cheese to stuff them which is fab as one serving of 2 mushrooms is only like 190cal.

Any other ideas as to what I can stuff them with as I'm getting bored of the same thing :)

    I LOVE mushrooms, just about any way. For stuffed mushrooms I like using recipes where the stuffing is a turkey sausage mixture. Whenever I make the stuffings I generally try to cut up some of the stems really fine and mix it in to give it more bulk without adding too many calories. If you like seafood, try recipes that use crab or shrimp or even lobster :smile: I saw a recipe once also for quinoa stuffed mushrooms, but haven't tried that myself.

    I love stuffed musrooms. I am not a vegetarian so I of course stuff with cream cheese and sausage or bacon so maybe you could try the soy crumbles or a seasoned veggie burger of your choice. I love soychroizo I bet that would be a tasty add in.

    I LOVE mushrooms! Seriously I put them in everything. I like to roast the caps, put a tomato on it and melt some cheese over top, maybe even a sprinkle of bread crumbs Yum! Now I'm wanting some stuffed mushrooms for dinner...

    Great experiments ahead! I'm vegetarian and I like mixing:

    Spinach, artichokes, Parmesan
    Diced bell peppers, olives, cherry tomato halves, marinara sauce
    Soyrizo, chopped dates, diced red pepper and/or a bit of rice
    Mashed sweet potato, goat cheese/light cream cheese, jalapeño jelly or sriracha
    Prepared bread stuffing, frozen cranberries, sautéed onion and celery
    Black beans, zucchini, salsa, cheese
    A spoon of pesto or marinara or salty cheese, topped with an egg and soft baked

    ^^ Those sound great. I was thinking brown rice with tomatoes, and other veggies. You could make one similar to stuffed peppers.

    I don't do stuffed mushrooms. I like to dice up baby bellas with some onions and fry them in some olive oil with salt and pepper, then eat them on a pita with spinach and some cheese.
