Gluten and Grain Free

I am a clinically diagnosed celiac with many other food intolerances. This has left me Paleo, plus rice, minus eggs. Anyone else with these kind of restrictions? I also have a other auto-immunes that make it very hard to lose weight. I appreciate any advice. I am keeping my calories at or below 1510 a day and I wear a Garmin to count steps and help keep me moving. I am 65 years old and love fishing and kayaking so I stay active. I just can't drop this stupid weight!

    I have not had wheat/gluten in 20+ years. I can only tolerate a small amount of dairy (cheese once a month or so). Eggs hurt my stomach so I avoid them. I am not super familar with what Paleo avoids - but let me know how I can help. I gained 57 lbs with my second pregnancy which was 12 sizes on me. I lost it over two years and have maintained that loss for 12+ years.

    I suffer from IBS-C and i'm on my second week of low-fodmap diet. Google it if you've never heard of it, but for now it means i have to avoid most gluten, lactose, and a wide array of sugars to identify my triggers. You can add me if you want :) I eat gluten free mostly so maybe my diary helps. In general, I just cut bread/pasta and replaced with more protein, fruit and veg. And when I do eat it, I get gluten-free bread or pasta :)

    Gluten free flours and the addition of a teaspoon of Xanthan Gum for delicious breads / cakes / pizzas etc

    Shop carefully in the gluten-free aisles

    just keep calorie counting carefully and accurately
