Ground Beef Recipes?

Super lean ground beef was on sale last week and I bought a ton of it!! Does anyone have any good recipes or ideas?

I have already thought of pasta dishes, meat loaves, taco salad and chili.

    How about stuffed bell peppers? A lovely, one-dish wonder.

    Why don't you make your own burgers?

    They are great, especially for the summer and you can make a load and freeze them up for when you need.

    Mine, including sweet potato chunky chips (fries) and tomato relish (no bun) comes in at 463 calories...

    What about Cottage pie?
    500g of mince
    Meat gravy that you pack with peas and carrot and onion
    600g of potato mashed up with milk

    Make 4 very large portions that I serve with other veg on the side.

    What about lettuce wraps like at PF Changs. I make those all the time using chicken.

    Did I give you my recipe for the "for the crowd" casserole? The one with noodles, corn, pimento, sour cream, soups..etc? I gave it to someone on here. If I didn't and you want it, just ask.

    You can also do a casserole spaghetti--

    1# gr beef
    3-4 stalks celery diced
    1 onion diced
    brown these 3 together and put in a casserole bowl.
    Add about 1/5 cups finely grated cheddar cheese
    3 cans of tomato soup
    3/4 of a pound cooked spaghetti (I use thin and cook about 3/4 of the 1# box)
    you can add mushrooms if you wish (canned)


    Stir up really well, and sprinkle parm. cheese on the top (either fresh, or the kraft stuff in the green can)

    Bake @ 350 for about an hour. It should be all bubbly on the edges.

    Mine makes about 12 1 cup servings..so you can input this into the recipe maker and get your values.

    Beef Moussaka

    Greek beef meatballs made with cinnamon, garlic & oregano, baked with tomato sauce, fresh herbs, bell peppers, olives and feta cheese.

    Indian 'Keema mattar'- ground beef sauteed with onions, garlic, curry powder, beef stock, & peas- serve with veggies/salad & or flatbread.

    Meatloaf- good recipes on Ginas skinny recipes.

    Turkish/middle eastern beef patties- make into burgers seasoned with garlic, onion, ras al hanout (middle eastern spice mix- you can buy it ready made or make a similar one using cinnamon, cumin, black pepper, nutmeg, chilli). Grill/bake these and serve with minty yoghurt sauce, salad & pitta bread/flatbread.

    Homemade Sloppy joes on wheat buns
    Pioneer Woman's Sour Cream Noodle Bake
    Hamburger Pie (Combine 1 lb ground beef, bread crumbs, season salt, pepper, mushrooms. Cook at 350 for 40 minutes. Top with shredded cheese and Idahoan 4 cheese mashed potatoes. Put back in oven for 10 minutes or until warm. 4 servings 393 cals per serving.)

    Mushroom & Swiss Sliders
    8 Servings

    1lb Ground Beef
    1/4 cup Egg Substitute
    salt & pepper
    1 tsp Garlic Powder
    1 Yellow or White Onion
    1 Tbl Butter
    2 cups Mushrooms
    3 Laughing Cow Light Swiss Wedges
    Dash of Worcestershire sauce.
    8 Dinner Rolls OR 4 large Romaine Leaves, cut in half (for lower calories/carbs)

    In a large bowl, mix together beef, egg, garlic powder and a pinch of salt & pepper. Form into 8 small patties. Cook on a greased appliance grill or greased pan on the stovetop until desired doneness is reached. Meanwhile, slice the onion very thin and slice the mushrooms thick. Melt butter in a large pan over medium low heat. Add onions and cook until translucent. Add mushrooms and a pinch of salt and pepper. Cook until onions are caramelized. Mash up the laughing cow cheese and mix with a little water until smooth. Add the cheese and Worcestershire sauce to the mushrooms & onions and cook until cheese is heated through. When burgers are done, let rest then place inside a roll or lettuce leaves and top with onion mushroom swiss mixture. Enjoy!
