Eating clean quick receipes

I've been eating clean for one week,

    I don't believe in "eating clean" as a thing, but most recipes involve whole foods, so I'm not sure what special clean recipes would be. There are lots of great food sites and cookbooks.

    I enjoy 101cookbooks.com, epicurious.com, and foodandwine.com.

    Greene on Greens and Barbara Kafka's Vegetable Love are two of MANY cookbooks about vegetables. Mark Bittman's books are good and he has articles/recipes in the NYTimes. There are many seasonally-focused and farm-focused cookbooks that are enjoyable and give good ideas.

    For fast cooking, though, I don't tend to focus on recipes, just generally plan around protein and veggies and a starch if I have one. If you cook it well there's no need to make it too complicated. For example, cook a pork chop, roast some brussels sprouts, maybe put together some onions, sauerkraut, and apples for a sauce.

    As long as you don't consider oil to be not clean, stir fry.

    grill some meat, poultry, or fish; steam some brown rice, saute and wilt some greens in olive oil. takes like 15 - 20 minutes; less if you're doing seafood.

    Add flavour to steamed or boiled food with spices and lime juices, marinating and dry spice rubs can also add another of flavour in a clean menu.

    Roasting veggies, almost any of them - I like the flavor improvement and you can then blend these up in a blender with a little broth for a quick, flavorful soup.

    Also, most cooked veggies, or many raw ones, you can blend up in a blender and use as a sauce for meats, or other veggies. An example: blended up roasted red bell pepper and green hot chiles and garlic, then served over broiled salmon (can add a little broth if needed, but I usually don't - I leave out the garlic sometimes, too).

    You can do the same with cooked fruits or raw blended up fruits - mango, orange, or banana based ones are really nice for pork (there are Cuban dishes you can find that have this). Cherry or apple are nice with pork, too, actually. Looking up chutney recipes can give you some ideas of the varieties you can make, and meats they go well with, or other veggies, or even other fruits.

    Veggies chopped very small, like rice sized (we used a food processor for this) and fried for just a few minutes with a few spices or herbs, then cooked on low with a cover on for a few minutes more - this makes a nice rice substitute if you are serving it with other foods. Look up Cauliflower rice - that's a good version of it, and gives you an idea of how to do it. But we've done similar with broccoli and other foods (usually not as good with more dense veggies) and it's worked nicely.

    No such thing as "eating clean" and the term is much derided around here, but a nice steak on the grill is always a good thing!
