    Ive just started using quorn in place of minced beef and other beef products, its high in protein but low in fat and is a good alternative.

    A few vegetarian tips I wish I'd known sooner:

    When you buy tofu, freeze it and then let it thaw before you press and cook it. It improves the texture and gives it a slightly nutty flavor.

    When cooking with tempeh, steam it before you bake/fry/otherwise cook it, to remove the bitterness.

    If you tolerate gluten well, seitan is cheap and easy to make (look for baked seitan recipes; way easier than simmering method) and extremely high in protein.

    Best vegetarian recipe blog on planet earth = oh she glows. Try the enchilada casserole, it's amazing. Fat free vegan blog is another good source (not literally fat free, happily).

    Final tip, monitor your iron, calcium and B12 intake and supplement if necessary.

    Lentils, lentils and more lentils especially so since its high in non heme iron with a decent amount of protein + fibre. Also if you want to firm up your tofu, put it in a strainer and pour salted boiling water over them- provided you have cut them into neat little pieces and spread them out.

    You can swap out nearly any of your favorite recipes. For example, I have used quinoa, lentils, barley, brown rice, butternut squash, and sweet potatoes all instead of meat in traditional dishes. I almost NEVER swap in tofu however, the texture doesn't make me too happy.

    I'm vegetarian, lactose-intolerant and gluten-intolerant so I am familiar with the struggle. Soups are great, I love tortilla soup, chili, kale, rosemary, and white bean soup, butternut squash soup with green curry paste and pumpkin seeds and green onions on top.

    Scrambled eggs with salsa and black beans and/or brown rice for breakfast or lunch. To hit my carb macro (which I have a lot of difficulty meeting because no gluten) I have rice chex with soy milk and stevia or cream of brown brown rice with fruit.

    I love Quest Bars as a snack. You could have Greek yogurt with fruit. Baked yam or potato. Green smoothies. Stir fries. Veggie burger layered with hummus, cucumbers, red onion, tomato, sprouts, avocado, whatever you want. I wrap it in lettuce usually and it's just as good.

    Sandwiches. Tacos. Burritos. Salads. I love salads with fruit and nuts in them with a white balsamic vinegar dressing. Or with basil and strawberries. Or shallots, tomatoes and avocados (and croutons for you, if you wanted them).
