I love veggies. Here is what I ate tonight:

Soup: Sweet Potato with Ginger & Veggies

Salad: Garden Greens with Walnut, Pecan, Cucumber & Basil Dressing

Entree:
Veggie Gorditas with Guacamole & Pickled Cabage
Brown Rice with Mixed Veggies & Almonds
Kidney Beans
Blanched Greens w/ Sunflower Seed & Dill Sauce
Pickled Red Radish

I'm a vegetarian! Tonight I had a Boca burger with kale chips and broccoli. So good!
