Carb Counting?

Hey guys, I'm having some trouble with my carbs.
I recently went vegan, and as you know, fruits and vegetables are packed with carbs. I only eat whole wheat breads, and I still limit my bread intake, but all of it is packed with carbs.
Is there a "good carb bad carb" rule to all of this, like sugars and fats?
I know that people on the Atkins diet can only have 35 grams of carbs, but they're allowed to eat as much fruit as they want except bananas, but when I have a plate full of fruit in the morning, its over fifty carbs. I am in no way on the atkins diet, I'm just curious if there's a way I should be counting my carbs; watching ALL of them? Or just watching the grains?

No, Atkins does not allow unlimited fruit.
If you're trying to watch carbohydrate intake on a vegan diet...I don't have many suggestions. The foods you're generally eating a pretty high up on the carb ladder, with the exception of nuts.0 -
The best carbs for you come from whole grain, fruits, vegetables and beans. They are the ones you want to eat. The refined high processed foods are the ones you want to limit... white bread, white rice, pastry, soda/pop. I have tried to make most of my carbs come from the good ones, and cut the bad ones as much as I can.0

I don't know if this will help or not but my trainer tells me I can have complex carbs such as grains, 100 % whole wheat, brown rice, long grain wild rice, wheat pasta, oatmeal (not instant) couscous, we are to avoid certain veggies because they turn to sugar in your system like potatoes, carrots, corn and peas and avoid tropical fruits for the smae reason like pineapple, mango, kiwi and banana. melons and berries and apples are ok. I would think your challenge might be protein. Also as far as carbs go I did an online search of complex carbs and came up with a long list of choices. That may help you too. Good luck!0
