gajar halva (carrot pudding)

I had lunch with a friend at a local Indian restaurant, and though I don't really like carrots, I was feeling courageous and decided to try the carrot pudding for dessert. IT WAS SO DELICIOUS! I've been googling for a recipe, but it looks like it has a good bit of butter, brown sugar, and half n half in it...all of which is fine, but I was hoping maybe someone had a tried-and-true lightened up version. I only had about 1/4 cup but man I wish I had some now....so yummy I want to make some!

    you could try some lighter butter options (Earth Balance tastes the most like butter), use a little less sugar, maybe soymilk instead of half/half. I find soy milk to be creamier than skim milk. i might try to recreate this...love that carrot stuff.

    The cardinal rule of making any halwa is to mix equal quantities of ghee/butter, sugar and carrots or whichever halwa you are making. Dried fruits can be added as per taste. I think if you include the healthy versions of everything that you would use, it may help. Try it with Vanila ice cream next time. It tastes even better.

    Yeah I'm not a fan of soy milk, but I LOVE almond milk, and I think it's definitely creamier than skim milk....I guess it would work okay instead of half n half. If you do recreate it, please let me know how it goes!!!
