replacements for pan frying?

usually i pan fry perogies and latkes in a skillet with some olive oil. this is low fat compared to my grandmothers version of pan frying them in schmaltz (chicken/goose fat) and canola oil. but still, id like to reduce the fat from oil drastically and that wont happen even with olive oil.
ive tried pan fying them with i cant believe its not butter, and they just dont come out as crispy as i'd like. they end up rather mushy.
any suggestions?

what about spray Pam olive oil? I use it anywhere i would normally use regular EVOO, like instead of brushing veggies with EVOO I spray a thin coat. It always works for pan frying stuff and cuts lotsa calories.0

Can you try cooking spray? There's Pam olive oil spray... maybe that would work??0

Just a heads up, I tried the it once w/ the olive oil spray, and it kind of tasted funky. It tastes much better w/ the butter spray. Some people swear by the olive oil flavor though.... maybe it's just personal preference when it comes to the taste?0

an update on this. i tried that olive oil spray and it sucked :{
it made my perogies all mushy and smell weird. my husband didnt even want to try them and i spat them out. what a waste of saurkraut!
but it was a great suggestion and im going to continue using it as a pan spray. i still need a replacement for frying

Are you sure you had your pan hot enough? It shouldn't make them mushy unless you were cooking on too low of a temperature. Just something to watch out for. It's not going to help the flavor or smell, I'm afraid.0
