OVEN APPLE PANCAKES

3 tbsp margarine or butter
1/2 cup flour ( I used whole wheat flour)
1/2 cup milk
3 eggs
2-3 apples - peeled and sliced
2 tbsp brown sugar (could use splenda brown sugar)
2 tsp cinnamon

Heat oven to 400
In 9x13 baking dish - melt margarine until sizzling.
While this is melting, combine flour, milk and eggs - beating with a whisk.
Pour this into sizzling margarine then arrange apples on top.
Combine brown sugar and cinnamon and sprinkle over batter

Bake for 20 minutes.

I did put 1 tbsp of ground flax seed into this recipe.
Also for substitution - you could use different fruits like strawberries or blueberries etc

    I based the recipe for 4 servings, but it could be up to 6 servings

    I have these in the oven right now! I'll post my results if it turns out! (I changed a few things, can't help but tamper with recipes, ya know!)

    Ok, these are tasty! I was kinda worried they might be a bit eggy since the ratio of eggs to flour seems pretty high, but it wasn't enough to bother me.

    My changes:
    To the batter I added 1/4 cup oats, 1/4 teaspoon baking powder, 1 tablespoon of brown sugar, a pinch of salt.
    I used 2 granny smith apples, sliced then and then cut crossways into small chunks.
    For the topping I combined the brown sugar, cinnamon, 1 T of melted margarine (used less in the bottom of pan), 1/4 up of oats and about 1/4 cup sliced almonds, and then sprinkled that over the batter and apples.

    Thanks for sharing, this is great! I served with a little light syrup.

    yep we had it for dessert tonight too. I too tweaked the recipe. i sprayed the pan and only put 1tbsp instead of 3 in te bottom of the pan. I think I also used a little less brown sugar on top. was quite nice the whole family ate it (they all had it with a little icecream) and they even had seconds. I divided it into 6 and that was plenty for me. Came in at 137 cals with the tweaks and 1/6 of the recipe

    add with edit hubby said I should add sultanns next time too
